Bake Shop Banana Walnut Bread
- 1-2/3 cups mashed, fully ripe bananas (about 4)
- 1/2 cup Miracle Whip Original Spread
- 1 egg
- 1-1/2 tsp. vanilla
- 1-1/2 cups flour
- 1 cup sugar
- 1/2 cup walnuts, coarsely chopped
- 1/2 cup dried apricots, chopped
- 1 tsp. baking soda
- Heat oven to 350 degrees F.
- Beat bananas, Miracle Whip, egg and vanilla in large bowl.
- Combine remaining ingredients in separate bowl.
- Add to banana mixture; stir just until moistened.
- (Batter will be lumpy.)
- Pour into 9x5-inch loaf pan sprayed with cooking spray.
- Bake 1 hour or until toothpick inserted in centre comes out clean.
- Cool in pan 10 min.
- ; remove to wire rack.
- Cool completely.
