Crushed Peppermint Creams
- 1 (7 ounce) jar marshmallow creme
- 23 cup butter or 23 cup margarine, softened
- 1 teaspoon vanilla extract
- 6 cups confectioners' sugar, sifted
- 14 cup finely crushed peppermint candy (about 10 hard round candies)
- 12 cup semi-sweet chocolate chips
- 6 ounces chocolate-flavored candy coating
- In a large bowl, beat marshmallow creme, butter, and vanilla extract until well blended.
- Gradually add confectioners sugar until mixture is well blended.
- Knead mixture by hand 2 to 3 minutes.
- Add crushed peppermint candies.
- Shape teaspoonfuls of candy into 3/4-inch balls.
- Place on a baking sheet lined with wax paper.
- Chill 1 hour or until firm.
- Melt chocolate chips and candy coating in the top of a double boiler over hot water.
- Using a fork, dip candies halfway into melted chocolate, shaking off excess chocolate.
- Return to baking sheet lined with wax paper.
- Chill until chocolate hardens.
- Store in airtight container in a cool place.
