Healthy chicken burger recipe

  1. Heat the oven to 190C/fan 170C/gas mark 5.
  2. In a small, shallow bowl, mix the breadcrumbs with the paprika and season well with freshly ground black pepper.
  3. Add the burgers, one at a time, and turn to coat in the flour mix.
  4. Place each on a baking tray lined with non-stick baking parchment and spray with oil.
  5. Bake for 20 mins.
  6. Meanwhile, mix the onion in a bowl with a large pinch of salt and the white wine vinegar.
  7. Leave for 10 mins, rinse with cold water, drain and pat dry on kitchen paper.
  8. Mix the yoghurt and harissa paste together and spread onto the cut sides of each roll.
  9. Top the roll bottoms with lettuce and tomatoes, add a cooked burger, the pickled onions and finally the roll tops.
  10. Serve.
