Greek Turkey Meatball Sandwich
- 1- 1/4 pound Ground Turkey (preferably Not Extra-lean)
- 1 whole Roasted Red Bell Pepper, Finely Chopped
- 1/2 whole Medium Yellow Onion, Grated
- 2 cloves Garlic, Minced
- 1/4 cups Chopped Italian Parsley
- 1- 1/2 teaspoon Dried Oregano
- 1 whole Egg
- 1/4 cups Plus 2 Tablespoons Dried Breadcrumbs
- 1 teaspoon Kosher Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 3 cups Marinara Sauce (your Favorite Kind)
- 6 whole Hoagie Rolls, Preferably Whole-wheat
- 1/4 cups Plus 2 Tablespoons Myzithra (or Feta) Cheese
- Preheat oven to 350 degrees F. Thoroughly coat a large baking sheet with cooking spray.
- In a large bowl, combine ground turkey, roasted red peppers, grated onion, garlic, parsley, dried oregano, egg, breadcrumbs, salt and pepper.
- Mix well to combine.
- Using a rounded 2-tablespoon portion of the turkey mixture, form meatballs by rolling the mixture between the palms of your hands.
- Place the meatballs on the prepared baking sheet, spacing evenly.
- Bake until the meatballs are firm to the touch and cooked through, about 20 minutes.
- In a large saucepan, heat your favorite marinara sauce over medium heat until simmering.
- Add meatball and stir to coat.
- Simmer until the sauce thickens slightly, stirring occasionally, about 15 minutes.
- Preheat the broiler.
- Place hoagie rolls on a large baking sheet, divide the meatballs and sauce evenly on the bottom halves of the rolls and top each with 1 tablespoon myzithra (or feta) cheese.
- Broil for about 1 minute, or until the buns are slightly toasted.
- Serve.
