Grilled Kingklip.
- 6 kingklip fillets or any firm white fish
- 4 tsp fish spice
- 4 tsp ground black pepper
- 1 tsp garlic salt
- 100 grams cheddar cheese, grated
- 250 grams garlic butter
- Preheat oven to maximum top grill
- Place a frying pan on high heat
- Mix all the spices together
- Season fish on both sides with the mixed spices
- Fry the fish in the frying pan over high heat using 100 grams garlic butter, only on one side for a minute
- Take an oven pan and grease the bottom with 50 grams of garlic butter
- Place the fried fish in the buttered oven pan with the fried side down
- Melt 100 grams of garlic butter and brush on the fish
- Top with the grated cheddar cheese
- Grill the fish in the oven for 12-15 minutes depending on the thickness of the fillets
- Optional: You can top the fish with one of the following:
