Baked Salmon With Bok Choy Recipe

  1. Heat oven to 475 degrees.
  2. Place extra virgin olive oil and butter in a skillet large sufficient to hold fish in a single layer.
  3. Place in oven 3 min, till butter is melted.
  4. Season fish with salt and pepper.
  5. Place fish flesh-side down in prepared skillet.
  6. Bake 10 min, turning carefully once halfway through cooking time, till just cooked through.
  7. Remove from skillet; tent with foil.
  8. Add in bok choy and lemon peel to skillet.
  9. Stir to coat with pan's oil.
  10. Place in oven 1 minute, till leaves are wilted and stems are warmed through.
  11. To make puree, blend peppers and salsa in a blender 30 seconds.
  12. Divide greens on four plates; top each with a piece of fish.
  13. Dollop puree over fish.
  14. This recipe yields 4 servings.
