Crockpot Pork and Kraut

  1. Liberally season pork with salt and pepper.
  2. Sear the roast on top of the stove by heating a large saute pan until hot.
  3. Pour in a little olive oil and sear on all sides until the roast is nice and brown, it usually takes about 2-3 minutes per side.
  4. You can skip this step if you like, but I find it adds more flavor.
  5. After the roast is nice and seared remove it from the heat.
  6. Add half the onions and apples to the bottom of the crockpot, season with a little salt and pepper.
  7. Set the roast on top of onions and add the apples, the rest of the onion, and the kraut.
  8. I like to pour the apple cider into the pan I seared the roast in and then scrape up any browned bits left in the pan.
  9. Pour the cider over roast.
  10. The liquid should cover at least half of your roast, Cover the crockpot and turn on low for 6 hours.
