Saganaki
- Flour
- 1 egg, beaten
- Kasseri cheese
- 3 tsp. olive oil
- 1 lemon cut in halves
- quarters
- 1 oz. brandy (optional)
- fireplace match (optional)
- Cut the Kesseri cheese into 4x4-inch squares, dip into beaten egg and flour both sides and edges for the squares.
- This keeps it from melting away during cooking.
- Fry the squares in heated olive oil until golden.
- Turn off burner and immediately add brandy.
- Set afire with long match (for the brave at heart only, but traditional).
- Put out the flame with lemon juice.
- Serve sizzling with coarse bread (Italian or French).
