Delectable Eclair Torte
- 2 cup room temperature water
- 2 cup flour
- 8 large eggs
- 1 cup salted butter
- 1 vanilla pudding,recipe attatched
- 2 cup heavy cream, very cold
- 1/4 cup powdered sugar
- 1 tsp powdered gelatin mixed with 1 tablespoon hot water. Microwave for 30 sconds
- 1/2 recipe for chocolate sauce, recipe attatched
- Prepare pudding recipe.
- Chill while preparing and baking torte.
- In a saucepan over medium heat, bring water and butter to boil.
- Add flour and stir until soft ball forms of dough.
- Remove pan from heat and beat in one egg at a time making sure each addition is well incorporated.
- I use hand mixer making the job much easier.
- Pan should not be non stick if using this method.
- Preheat oven to 400F.
- Spread batter into a greased 9" by 13" baking pan.
- Push dough up sides of entire pan.
- Bake for 30-35 minutes.
- It should puff and be golden brown.
- Remove and cool for 30 minutes.
- If you'd like to serve on a platter or serving dish, remove puff and do so before adding on pudding layer.
- Spread pudding over puff dough and refrigerate for 35 minutes.
- In mixing bowl, beat on medium speed the cream.
- Once it starts to thicken add gelatin mix then powdered sugar..
- Beat until you have a thick whipped cream consistency.
- Spread cream over pudding.
- Chill entire torte 1 hour before adding chocolate drizzle and serving.
- Prepare chocolate sauce and drizzle over chilled torte.
- Leftovers must be refrigerated.
- Pour extra sauce over each serving if you like.
- You can also make my caramel sauce and drizzle some of that over for extra decadence.
