Blackberry Soda Cracker Pie Recipe
- 4 x egg whites
- 1/4 tsp cream of tartar
- 1 tsp vanilla extract
- 1 c. granulated sugar
- 16 x saltine crackers crushed
- 1/2 c. pecans minced
- 8 ounce whipping cream
- 1/3 c. granulated sugar
- 1 tsp vanilla extract
- 2 c. Blackberries to 3 c. fresh or possibly frzn
- Preheat oven to 325degrees; grease and flour a 9-inch pie plate.
- In a large mixing bowl, beat the egg whites and cream of tartar till foamy.
- Beat in 1 tsp.
- vanilla extract.
- Gradually beat in 1 c. sugar till stiff peaks form.
- Mix in the crackers and pecans.
- Transfer the egg mix to the prepared pie pan, spreading over the bottom and sides.
- Bake for 35 to 40 min till golden brown; cold.
- For the filling, in a mixing bowl, beat the cream, 1/3 c. sugar and 1 tsp.
- vanilla till soft peaks form.
- Mix in the berries.
- Spoon into the crust.
- Store in the Note: Blueberries, blackberries or possibly sliced strawberries may be used in place of the Blackberries.
