Southern Meatloaf
- 1 whole Small Onion, Diced
- 1 stalk Celery, Diced
- 1 whole Bell Pepper, Stem And Seeds Removed, Then Diced
- 1 pound Ground Beef
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1 whole Egg, Beaten
- 1/2 cups Milk
- 2 slices Bread, Torn Into Pieces
- 1 can Tomato Paste (6 Oz Can)
- 3/4 cups Dark Karo Syrup, Or More (up To 1 Cup) If You Like It Sweeter
- 1/2 cups Ketchup - (Enough To Cover Top)
- 1- 1/2 Tablespoon Bread Crumbs
- 1/2 cups Durkee's French Fried Onions (Optional) For Top
- 1.
- Preheat oven to 350 F. Saute the onions, celery and bell pepper in a skillet over medium heat.
- When they are softened and translucent, remove skillet from heat.
- 2.
- Sprinkle salt and pepper over meat in a large bowl.
- 3.
- In a small/medium bowl, mix the egg, milk and bread together.
- 4.
- Mix the bread mixture into the meat.
- 5.
- Mix the onion, celery, bell pepper, tomato paste and Karo syrup into the meat.
- 6.
- Transfer to either a casserole dish or a non-stick loaf pan.
- I use a non-stick loaf pan by Wilton.
- Its a 9 x 5 x 2 inch (roughly) pan with another inside pan that has holes in the bottom to let grease run out.
- 7.
- Spread ketchup over the top of the loaf.
- 8.
- Sprinkle bread crumbs over top.
- 9.
- Optional: A few Durkees onions on top is a yummy extra!
- 10.
- Put into the 350 F oven for 45 minutes to 1 hour.
