Sophie's Dinner in a Pepper

  1. Preheat oven to 180C.
  2. Mix chopped tomatoes with herbs, spices, sweetcorn.
  3. Chop chicken into small strips/bite sized pieces.
  4. Cut the top off the pepper, remove the seeds etc.
  5. Measure the cous cous out by filling half a pepper.
  6. Combined with the chicken and taking into account swelling, I found this to be perfect.
  7. Mix into your tomato mixture.
  8. Place a dollop of cous cous mixture in the bottom.
  9. Add a layer of chopped chicken, and continue layering until your pepper is full.
  10. Wrap the pepper in foil, and place upright on a baking tray.
  11. Bake for around 35 minutes.
