Artichoke Rice Salad
- 2 tablespoons oil
- 1 teaspoon lemon juice
- 1 cup chickpeas, drained and rinsed
- 1 cup cooked rice
- 1 (6 1/2 ounce) jar marinated artichoke hearts, drained and quartered
- 1 medium ripe avocado, peeled and chopped
- 12 cup chopped green pepper
- 12 cup chopped sweet red pepper
- 1 medium tomatoes, chopped
- salt and pepper
- In a large bowl combine oil and lemon juice.
- Stir in remaining ingredients.
- (PS: I don't like peppers, so I don't use.
- ).
- Cover and chill before serving.
