Cherry-Almond Couscous

  1. Mix scallion whites, couscous, olive oil and cherries.
  2. Boil water and add exactly 3 cups to bowl and quickly stir together.
  3. Immediately cover bowl with plastic wrap.
  4. Let stand 30 minutes.
  5. With a fork, fluff couscous, add almonds and check for seasoning.
