Simmered Round Steak And Vegetables
- 1 1/2 to 2 lb. round steak
- 1/2 tsp. salt
- 3 Tbsp. cooking oil
- 1 medium green pepper, sliced into rings
- 1/2 tsp. basil
- 2/3 c. cold water
- 2 Tbsp. flour
- 4 Tbsp. flour
- 1/4 pepper
- 1 medium onion, sliced thin and separated
- 2/3 c. carrot strips
- 2/3 c. dry white wine
- 1/2 tsp. beef bouillon granules
- Pound trimmed meat with mallet.
- Cut into serving pieces.
- Set aside.
- Mix 4 tablespoons flour, salt and pepper in plastic bag. Add beef and shake to coat meat.
- Heat cooking oil in large skillet.
- Add beef and flour mixture.
- Brown over medium heat. Layer onion, green pepper and carrots over beef and sprinkle with basil.
- Add wine and heat to boil.
- Cover and reduce heat.
- Simmer 1 hour until meat is tender.
- Transfer beef and vegetables to serving plate.
- Place cold water in small bowl.
- Blend 2 tablespoons flour and stir into drippings in skillet.
- Stir in bouillon granules.
- Cover and use medium heat until thick and bubbly.
- Makes 4 to 6 servings.
