Prairie Relish
- 12 ripe tomatoes, stem ends and cores removed, sliced
- 5 medium onions, sliced
- 3 cups raisins
- 1 tablespoon table salt
- 3 cups packed brown sugar
- 2 tablespoons mustard powder
- 3 cups white vinegar
- 5 cloves, tied in double layer of cheesecloth
- Put first 4 ingredients into large saucepan.
- Bring to a boil over medium heat.
- Cover and simmer 2 hours, stirring 2 or 3 times.
- Press through food mill or sieve.
- Return puree to saucepan.
- Add remaining ingredients.
- Bring to a boil over medium heat.
- Simmer, uncovered, stirring frequently for 15 minutes.
- Discard spice bag.
- Pour into hot sterilized half pint jars to within 1/2 inch of the top.
- Place sterilized metal lids on jars and screw metal bands on securely.
- For added assurance against spoilage, you may choose to process in boiling water bath for 10 minutes.
