Farmers Frittata

  1. Fry the bacon in an 8-inch nonstick skillet over medium heat until crisp.
  2. Remove the bacon to a paper towellined plate to cool slightly.
  3. Cut it into 2-inch pieces.
  4. Using a whisk or a fork, beat the eggs in a small bowl until frothy.
  5. Heat the butter in a separate skillet over medium-high heat.
  6. Add the home fries and cook for 1 minute, or until the fries are nice and crispy.
  7. Add the bacon and toss it with the home fries until well combined.
  8. Pour the eggs into the pan, tilting the pan to evenly distribute the eggs over the home fries and bacon.
  9. Using a silicone or rubber spatula, gently pull the cooked egg from the edges toward the center of the pan, while allowing the liquid egg to run underneath and onto the hot pan.
  10. When the sides of the omelet begin to rise up the edge of the pan, flip the omelet.
  11. It is done when it is nicely set but not overly firm.
  12. There should be traces of just-cooked egg in the center of the frittata.
  13. Serve hot.
