Garden Chicken Hoagie

  1. Preheat broiler.
  2. Brush cut sides of rolls with 1-1/2 tbsp.
  3. of the oil.
  4. Toast lightly and set aside.
  5. In a medium mixing bowl, toss zucchini and onions with remaining 2 tbsp.
  6. oil and seasonings.
  7. In a small skillet, over medium-high heat, saute zucchini and onion for 3 to 5 minutes, until softened.
  8. Spread mayonnaise on bottom halves of rolls.
  9. Spoon 1/4 of the zucchini mixture on each roll.
  10. Top each with a slice of chicken, 2 to 3 slices of tomatoes and a slice of provolone.
  11. Place under broiler until cheese melts.
  12. Place tops of rolls on sandwiches.
  13. Serve immediately.
