Garden Chicken Hoagie
- 4 hoagie rolls, split
- 3 tbsp. garlic-flavored oil, divided
- 2 sm. zucchini, scrubbed and thinly sliced
- 1 sm. onion, thinly sliced
- 1 tsp. dried Italian seasoning
- Salt and pepper to taste
- 2 to 3 tbsp. mayonnaise
- 4 slices chicken breast meat
- 2 sm. tomatoes, sliced
- 4 slices provolone cheese
- Preheat broiler.
- Brush cut sides of rolls with 1-1/2 tbsp.
- of the oil.
- Toast lightly and set aside.
- In a medium mixing bowl, toss zucchini and onions with remaining 2 tbsp.
- oil and seasonings.
- In a small skillet, over medium-high heat, saute zucchini and onion for 3 to 5 minutes, until softened.
- Spread mayonnaise on bottom halves of rolls.
- Spoon 1/4 of the zucchini mixture on each roll.
- Top each with a slice of chicken, 2 to 3 slices of tomatoes and a slice of provolone.
- Place under broiler until cheese melts.
- Place tops of rolls on sandwiches.
- Serve immediately.
