Zaatar-Lavash Pizzas

  1. Preheat oven to 425F.
  2. Toss together sliced tomato and red onion in small bowl.
  3. Set aside.
  4. Place lavash on baking sheets, and spread each with one-quarter of goat cheese.
  5. Sprinkle with zaatar, and drizzle with reserved tomato oil.
  6. Scatter tomato-onion mixture over lavash.
  7. Bake 8 minutes, or until edges of lavash are crisp and brown and zaatar has deepened in color.
  8. Drizzle once more with tomato oil.
