Spiced Cucumber Rings

  1. Peel, seed and slice cucumbers.
  2. Use cucumbers that are too big for other uses (those that have turned yellow are okay).
  3. Mix together 1 gallon water and the lime.
  4. Pour over cucumbers; let stand for 24 hours.
  5. Wash thoroughly.
  6. Put into ice water for 3 hours; drain.
  7. Make syrup with the sugar, vinegar and food coloring.
  8. Make a spice bag with the remaining ingredients.
  9. Bring to a boil the vinegar, sugar, coloring, spices and candy.
  10. Pour cucumbers into the mixture; bring back to boil.
  11. Let stand for 24 hours.
  12. Bring back to boil; boil for 30 minutes.
  13. Pack into clean, hot jars.
  14. Adjust lids.
  15. Process 10 minutes in a boiling water bath.
  16. Yields 8 pints.
