Creole Noodles

  1. Cut ham into 3/4-inch chunks.
  2. Slice celery; dice onion.
  3. Prepare noodles as label directs, using 2 teaspoons salt in water; drain.
  4. Meanwhile, in 4-quart saucepan over medium-high heat, in hot salad oil, cook celery and onion, stirring occasionally, 5 minutes.
  5. Stir in ham and continue cooking until ham is lightly browned.
  6. Add stewed tomatoes, frozen corn, frozen okra, and creole seasoning; over high heat, heat to boiling.
  7. Reduce heat to low; cover and simmer 10 minutes or until vegetables are tender.
  8. To serve, place noodles in large bowl; top with ham mixture.
  9. Garnish with celery leaves.
  10. Toss before serving.
