Creole Noodles
- 3/4 lb. cooked ham (in one piece)
- 2 medium celery stalks
- 1 small onion
- 3/4 package wide egg noodles
- salt
- 1 tbsp. salad oil
- 2 can stewed tomatoes
- 1 package frozen whole-kernel corn
- 1 package frozen whole okra
- 1 tbsp. Creole seasoning
- Celery leaves for garnish
- Cut ham into 3/4-inch chunks.
- Slice celery; dice onion.
- Prepare noodles as label directs, using 2 teaspoons salt in water; drain.
- Meanwhile, in 4-quart saucepan over medium-high heat, in hot salad oil, cook celery and onion, stirring occasionally, 5 minutes.
- Stir in ham and continue cooking until ham is lightly browned.
- Add stewed tomatoes, frozen corn, frozen okra, and creole seasoning; over high heat, heat to boiling.
- Reduce heat to low; cover and simmer 10 minutes or until vegetables are tender.
- To serve, place noodles in large bowl; top with ham mixture.
- Garnish with celery leaves.
- Toss before serving.
