Orange Sauced Broccoli and Peppers
- 1 medium red bell pepper
- 1 cup water
- 1 lb fresh broccoli florets
- 1 small onion, chopped
- 12 tablespoon margarine
- 1 12 teaspoons cornstarch
- 23 cup orange juice
- 2 teaspoons Dijon mustard
- Cut the pepper into 1" squares.
- In a medium saucepan, bring the cup of water to a boil, Once boiling, add the broccoli and pepper.
- Cook 8-10 minutes.
- While the vegetables are cooking, put the margarine in a small saucepan over medium heat.
- When it is melted, add the onion and cook until tender.
- Stir in cornstarch.
- Add the mustard and orange juice.
- Stir constantly until the mixture is thickened and bubbly.
- Cook and stir 2 more minutes.
- When the vegetables are done, drain and return to saucepan.
- Spoon the sauce over the broccoli and peppers and serve.
