Sweet Onion (Vidalia) Soup
- 2 lbs vidalia onions or 2 lbs other sweet onions
- 2 tablespoons olive oil
- 6 cups beef broth
- 12 cup dry wine
- 1 bay leaf
- 1 12 teaspoons paprika
- salt and pepper
- Thinly slice onions.
- In a soup pot heat the olive oil on medium.
- Add the onions and saute for 1/2 hour.
- Add the paprika, broth, wine and the bay leaf.
- Simmer for 30 40 minutes, remove the bay leaf and add salt and pepper to taste.
