Spicy Baby Clams in Mini Shells
- 12 lb ground pork
- 12 cup yellow onion, small cubes
- 3 cloves fresh minced garlic
- 1 tablespoon fresh minced ginger
- 1 tablespoon black bean sauce
- 12 teaspoon dried red chili
- 1 tablespoon cornstarch
- 2 tablespoons oyster sauce
- 2 tablespoons oil
- 12 cup clam juice
- 1 cup baby clams
- 12 teaspoon sesame seed oil
- 2 stalks green onions, minced
- 1 tablespoon chinese fresh parsley leaves, minced
- 30 athens miniature phyllo cups
- Bake in a 400 the mini shells until it brown and set aside to cool.
- In a mixing bowl blend the pork, onion, garlic, ginger, black bean sauce, chili, cornstarch, oyster sauce and oil together and set aside to 15 minutes.
- In a nonstick heated skillet lightly coat with oil add in the pork mixture and saute over high heat to a golden brown.
- Pour in the clam juice and when mixture come to a boil add baby clam and remove from heat.
- Blend in the sesame seed oil, green onion and parsley.
- Mix the mixture and spoon mixture into the mini shells and serve hot.
