Mediterranean Shrimp Salad Bowl
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 14 cup red onion, sliced
- 14 cup red bell pepper, sliced
- 2 tablespoons of fresh mint, chopped
- 4 cups Baby Spinach
- 5 kalamata olives, pitted sliced
- 14 cup artichoke heart
- 1 12 cups canned shrimp, drained
- salt and pepper, to taste
- Whisk the olive oil and lemon juice in a small bowl.
- Combine the vegetables, mint and shrimp in a large chilled bowl and season with salt and pepper.
- Toss with the dressing and serve.
