Zucchini Lasagna
- 2 cloves Garlic, Minced
- 1 whole Onion, Chopped
- 1 jar (24 Oz.) Your Favorite Pasta Sauce
- 1 pound Ground Turkey
- 1 whole Egg
- 2 cups Cottage Cheese, Low Fat
- 1 teaspoon Whole Wheat Flour
- 1/2 cups Skim Mozzarella Cheese, Shredded
- 2- 1/2 cups Zucchini, Sliced
- Salt And Pepper, to taste
- Preheat oven to 350F.
- In a large pan, saute the garlic and onion over medium heat until tender.
- Add tomato sauce and turkey.
- Cook until turkey has browned.
- Season with salt and pepper, if needed.
- Remove from heat.
- In a small bowl, beat the egg.
- Stir in cottage cheese, flour and 1/4 cup mozzarella cheese.
- Pour 1/2 of meat sauce into a 9x13 casserole dish.
- Top with a layer of zucchini slices and cottage cheese mixture.
- Repeat layers.
- Top with the remaining cheese.
- Bake uncovered for 30 minutes.
