Strawberry Yogurt Freeze
- 1 cup strawberry, crushed
- 1 cup nonfat plain yogurt
- 13 cup Splenda sugar substitute
- 12 teaspoon almond extract
- 2 egg whites
- 2 tablespoons cornstarch
- 14 cup Splenda sugar substitute
- 13 cup water
- 1 cup blueberries (fresh or frozen)
- 2 cups sliced strawberries
- 2 tablespoons Amaretto or 2 tablespoons orange-flavored liqueur
- Combine crushed strawberries, yogurt, Splenda and almond extract.
- Beat egg whites until stiff peaks form.
- Fold in strawberry mixture.
- Spread evenly in an 8-inch square pan.
- Freeze until firm, about 4 hours.
- Cover pan for longer storage.
- To serve cut into squares, and serve with sauce or fruit.
- DOUBLE BERRY SAUCE: In a heavy saucepan combine cornstarch, Splenda, and water.
- Stir in blueberries.
- Cook and stir over medium heat until mixture comes to a boil.
- Simmer 3 minutes.
- Remove from heat, Stir in 2 cups sliced strawberries and Amaretto or orange flavored liqueur, if desired.
