Coconut Raisin Oatmeal Cookies
- 34 cup butter
- 34 cup sugar
- 12 cup brown sugar, lightly packed
- 1 egg
- 1 cup whole meal flour, sifted
- 1 cup rolled oats
- 34 cup shredded coconut
- 14 cup wheat germ
- 1 teaspoon baking powder, sifted
- 1 teaspoon bicarbonate of soda, sifted
- 1 12 cups raisins
- Preheat oven to 180C (350F).
- Cream butter, sugars and egg together thoroughly.
- Add sifted flour, oats, coconut, wheatgerm and sifted baking powder and bi-carb soda.
- Mix well.
- Stir in raisins.
- Drop spoonfuls of the cookie batter onto lightly greased baking sheets then flatten slightly with the back of a floured fork.
- Bake for 13-15 minutes or until lightly golden.
