Ham It Up With Potatoes Recipe

  1. Boil potatoes with skins on till tender, drain and peel while warm.
  2. Mash through potato ricer into large bowl.
  3. Add in butter, egg, salt, pepper, lowfat milk and Parmesan cheese.
  4. Blend at medium with electric mixer till they become the consistency of mashed potatoes.
  5. Spread potato layer in lightly greased 2 qt deep casserole dish.
  6. Layer with part of ham and cheese.
  7. Repeat the process ending with potato layer on top.
  8. Dot with butter.
  9. Sprinkle with bread crumbs.
  10. Bake at 350 degrees for 30 min.
  11. Serves 6.
