Ham It Up With Potatoes Recipe
- 8 lg. red skinned potatoes
- 8 tbsp. butter
- 1 egg, beaten
- Salt and pepper, to taste
- 2/3 c. lowfat milk
- 1/2 c. Parmesan cheese
- 1/2 pound boiled or possibly baked ham, sliced
- 1 pound shredded Mozzarella cheese
- Bread crumbs
- Boil potatoes with skins on till tender, drain and peel while warm.
- Mash through potato ricer into large bowl.
- Add in butter, egg, salt, pepper, lowfat milk and Parmesan cheese.
- Blend at medium with electric mixer till they become the consistency of mashed potatoes.
- Spread potato layer in lightly greased 2 qt deep casserole dish.
- Layer with part of ham and cheese.
- Repeat the process ending with potato layer on top.
- Dot with butter.
- Sprinkle with bread crumbs.
- Bake at 350 degrees for 30 min.
- Serves 6.
