Sirloin Napoletana
- 2 tablespoons olive oil, divided
- 2 lbs top sirloin steaks, sliced
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 (15 ounce) can diced tomatoes, with juice
- 12 cup red wine
- 1 teaspoon dried oregano
- 12 teaspoon dried basil or 2 teaspoons chopped fresh basil
- salt, to taste
- ground black pepper, to taste
- In a large skillet, heat 1 tbsp olive oil over medium-high flame.
- Brown the steak strips on both sides.
- Remove to a plate when browned.
- Add 1 tbsp oil to pan.
- When shimmering, add onion and saute until deep golden brown, 12-15 minutes.
- Add garlic and saute 1 minute or until fragrant.
- Return beef to pan and add remaining ingredients.
- Simmer over low heat until beef is cooked through, 10-15 minutes.
