Double-Berry Melon Smiles
- 1 Crenshaw melon (about 3-1/2 lb.)
- 1/2 cup blueberries Whole Foods 3 For $10.00 thru 02/09
- 3/4 cup boiling water
- 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
- 1/2 cup cold water
- Cut melon lengthwise in half; remove and discard seeds.
- Scoop out melon halves, leaving 1-inch-thick shells.
- Chop removed melon; drain well.
- Cut thin slice off bottom of each melon half to allow it to stand upright.
- Spoon chopped melon and blueberries into melon shells.
- Add boiling water to gelatin mix in medium bowl; stir 2 min.
- until completely dissolved.
- Stir in cold water.
- Pour into melon shells.
- Refrigerate 4 hours or until gelatin is firm.
- Cut into wedges to serve.
