Pork Chop and Arugula Salad

  1. Combine the shallot, vinegar, thyme, pinch of salt and dash of pepper in a medium bowl.
  2. Gradually whisk in the oil.
  3. Put the pork chops in a zip lock bag.
  4. Add 1/2 of the marinate Dressing.
  5. Coat the pork and set aside to marinate for 5 minutes.
  6. Cook on Medium high heat 4-5 minutes per side.
  7. Let rest and then slice into strips.
  8. Divide porkchop strips, walnuts, grapes, & gorgonzola evenly onto arugula beds.
  9. Top with the remaining dressing.
  10. Grab a fork!
