Rhubarb Pie
- 1 12 cups sugar
- 4 cups rhubarb, cut in 1" slices (1 lb)
- 14 cup enriched flour
- 1 9" pastry crust with lattice top
- 34 teaspoon nutmeg
- 2 tablespoons butter or 2 tablespoons margarine
- 3 eggs, slightly beaten
- Blend sugar, flour, nutmeg.
- Beat into eggs.
- Add rhubarb.
- Line 9" pie plate with pastry; fill; dot with butter.
- Top with lattice crust.
- Bake at 400 degrees 50 to 60 minutes.
- Cool.
