Baked Beans

  1. Preheat oven to 400F.
  2. Spray 2-quart baking dish with nonstick cooking spray.
  3. Layer sliced mushrooms on bottom of dish, and sprinkle with breadcrumbs to form crust.
  4. Stir together beans, spinach, onion, cheddar cheese and seasoning in a large mixing bowl.
  5. Spoon into baking dish.
  6. Combine bacon bits and Parmesan cheese, and sprinkle over top.
  7. Bake beans for 20 minutes, remove from oven, garnish with parsley and serve.
