Refreshing Broccolini and Chicken Tenders Tossed with Shio-Kombu
- 50 grams Broccolini
- 1 fillet Chicken tenders, steam cooked in the microwave (See
- 3 to 5 grams Shio-kombu
- 1 Yuzu ponzu
- Put the rinsed and lightly drained broccolini in a resealable plastic bag.
- Leave a gap in the seal for air to escape, then microwave for 1 and 1/2 minutes at 900 W. Remove the broccolini from the bag, then blanch immediately.
- Squeeze out excess water, then cut into bite-sized pieces.
- Put the broccolini, shredded chicken tenders, and shio-kombu in a bowl, toss together, then let sit for 5 minutes.
- When the shio-kombu gets soft, and the salt flavor is evenly distributed, drizzle on yuzu ponzu to taste.
