Chicken Sausage, Scallion & Cilantro Meatballs With Avocado Creme Dipping Sauce
- 1 pound Chicken Sausage, Casings Removed
- 1 cup Whole Wheat Bread Crumbs
- 3/4 cups Sharp Cheddar Cheese, Shredded
- 1 whole Egg
- 1/2 cups Scallions, Diced
- 1/2 cups Cilantro, Chopped
- 1 teaspoon EACH: Smoked Paprika, Garlic Powder And Cumin
- 1 whole Avocado, Peeled, Pitted, And Cut Into Chunks
- 1/2 cups Nonfat Greek Yogurt
- 1/4 cups Cilantro
- 1 teaspoon Fresh Lime Juice
- 1/2 teaspoons Garlic Salt
- 1/2 teaspoons Cumin
- 1 teaspoon White Wine Vinegar
- Preheat oven to 425 F.
- For the sauce: In a food processor combine all ingredients for avocado creme dipping sauce.
- Pulse to mix well, taste and adjust seasoning if needed.
- Set aside in fridge.
- In a large bowl combine all ingredients for meatballs except for 1/4 cup of the shredded cheddar cheese.
- Mix well.
- Line a sheet of foil on a baking sheet and spray foil with cooking spray.
- Shape meat mixture into 1 inch meatballs and place on baking sheet.
- Sprinkle remaining 1/4 cup cheese over meatballs.
- Bake for 20 minutes until cooked through.
- Serve with dipping sauce.
