Chicken Sausage, Scallion & Cilantro Meatballs With Avocado Creme Dipping Sauce

  1. Preheat oven to 425 F.
  2. For the sauce: In a food processor combine all ingredients for avocado creme dipping sauce.
  3. Pulse to mix well, taste and adjust seasoning if needed.
  4. Set aside in fridge.
  5. In a large bowl combine all ingredients for meatballs except for 1/4 cup of the shredded cheddar cheese.
  6. Mix well.
  7. Line a sheet of foil on a baking sheet and spray foil with cooking spray.
  8. Shape meat mixture into 1 inch meatballs and place on baking sheet.
  9. Sprinkle remaining 1/4 cup cheese over meatballs.
  10. Bake for 20 minutes until cooked through.
  11. Serve with dipping sauce.
