Turkey Stuffed Pitas Recipe
- 2 c. cubed cooked turkey
- 1/2 c. sliced mushrooms
- 1 green pepper, seeded and minced
- 1 tbsp. extra virgin olive oil
- 1 med. tomato, seeded and minced
- 1 sm. cucumber, minced
- 1 bunch green onions, minced
- 1/4 c. plain low-fat yogurt
- 1/4 c. buttermilk
- 1 tbsp. lemon juice
- 1 garlic clove, chopped
- Grnd black pepper, to taste
- 4 lg. whole wheat pitas (pocket bread)
- Place turkey in large bowl.
- Saute/fry mushrooms and green peppers in extra virgin olive oil till slightly softened.
- Add in to turkey.
- Add in tomato, cucumber, and green onions to turkey mix.
- In separate bowl, add in remaining ingredients till blended.
- Add in dressing mix to turkey and toss slightly.
- Cut pitas in half.
- Spoon about 1/2 c. turkey mix into each half.
