Taco Soup Recipe
- 2 pound grnd beef
- 1 sm. onion, minced
- 3 (4 ounce.) cans green chilies, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 (15 ounce.) can pinto beans
- 1 (16 ounce.) can lima beans
- 1 (16 ounce.) can kidney beans
- 1 (14 1/2 ounce.) can hominy
- 1 (1 1/4 ounce.) pkg. taco seasoning
- 1 1/2 c. water
- 1 (1 ounce.) pkg. dry Ranch dressing mix
- 3 (14 1/2 ounce.) cans stewed tomatoes
- Shredded cheese (optional)
- Tortilla chips (optional)
- In large Dutch oven or possibly kettle, brown beef and onion.
- Drain any fat.
- Drain all the beans.
- Add in all ingredients except cheese and chips.
- Bring to boil, reduce heat and simmer for 30 min.
- I usually add in about 1 c. of water more to be more "soupy."
- Yield: about 10 servings.
