Lentil Goat Cheese Burgers
- 3/4 cups Brown Lentils
- 1- 1/2 cup Water
- 1 whole Bay Leaf
- 1 teaspoon Olive Oil
- 1 cup Finely Chopped Onion (150gm)
- 2 cloves Garlic, Minced
- 1 whole Large Carrot, Grated
- 1 Tablespoon Balsamic Vinegar
- 2 ounces, weight Fresh Goat Cheese
- 1/4 cups Panko Bread Crumbs (30gm)
- 1/2 teaspoons Italian Seasoning Blend
- 1/4 cups Liquid Egg Substitute (or 2 Egg Whites Or 1 Whole Egg)
- Salt And Pepper, to taste
- 4 whole Sandwich Buns
- Optional Burger Garnishes
- Place lentils, water, and bay leaf in a small saucepan and bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes, until lentils are tender.
- Remove bay leaf.
- If all of the water has not been removed, drain the lentils.
- Set aside and let cool.
- Meanwhile, heat the olive oil in a skillet over medium heat.
- Saute the onions, garlic, and carrot for 5-8 minutes, until softened.
- Season with salt and pepper.
- Add the balsamic vinegar, increase heat to let it reduce a bit, and then set aside until lentils are done.
- Combine the lentils, sauteed vegetables, and remaining ingredients (except buns and garnish) in a food processor, and pulse several times to combine.
- Transfer to a bowl and refrigerate for at least 45 minutes, or overnight.
- Heat a skillet coated with nonstick cooking spray over medium-high heat.
- Divide the lentil mixture into four equal portions, and shape each portion into a patty.
- Place the patties on the skillet and cook for 10-12 minutes, flipping halfway through.
- Serve on buns with your favorite burger garnishes.
