Lime-Ginger Panko Crumb-Crusted Fish
- 3-3/4 cups panko bread crumbs
- 3/4 cup olive oil
- 3 Tbsp. fresh lime juice
- 3 Tbsp. green onions, minced
- 3 Tbsp. fresh cilantro, minced
- 1 Tbsp. gingerroot, peeled, minced
- 1 Tbsp. lime zest, grated Safeway 3 ct For $1.00 thru 02/09
- 1-1/2 tsp. minced fresh garlic
- 27 each cod fillets (3-1/2x3 inches)
- 1 cup GREY POUPON Country Dijon Mustard
- 3 cups Citrus-Ginger Sauce
- Mix all ingredients except fish, mustard and Citrus-Ginger Sauce.
- Cover and refrigerate until ready to use.
- Place fish in single layer in lightly oiled full-sheet pan (or in oiled half-sheet pan for trial recipe).
- Spread each with 2 tsp.
- of the mustard, then top with 3 Tbsp.
- of the bread crumb mixture.
- Bake in 325 degrees F-convection oven 8 to 10 min.
- or until fish flakes easily with fork and topping is lightly browned.
- Drizzle with 2 Tbsp.
- Citrus-Ginger Sauce.
