Allegheny Marsh Hare Loaf Recipe

  1. Soak muskrat as described in "Muskrat - Basic Information" (included in this collection), then drain, bone, and grind once.
  2. Mix all ingredients together as for standard meat loaf.
  3. Put in a loaf pan, then set the pan in another pan of water.
  4. Bake at 350 degrees for 1 1/2 to 2 hrs.
  5. This recipe yields 6 servings.
