Allegheny Marsh Hare Loaf Recipe
- 1 1/2 lb Muskrat
- 2 x Large eggs beaten
- 1 c. Evaporated lowfat milk
- 1/3 c. Fine dry bread crumbs
- 1/4 x Onion grated
- 1/4 tsp Dry thyme
- 1 tsp Salt
- 1/4 tsp Freshly-grnd black pepper
- 1 tsp Worcestershire sauce
- Soak muskrat as described in "Muskrat - Basic Information" (included in this collection), then drain, bone, and grind once.
- Mix all ingredients together as for standard meat loaf.
- Put in a loaf pan, then set the pan in another pan of water.
- Bake at 350 degrees for 1 1/2 to 2 hrs.
- This recipe yields 6 servings.
