Bay Scallop Roll

  1. In a saute pan over medium high heat, heat the olive oil and butter.
  2. Add the garlic and cook for 1 minute.
  3. Add the herbs and cook for 30 seconds.
  4. Add the scallops and cook for 1 minute.
  5. Add the lemon and wine and cook for another 2 to 3 minutes, until the scallops are just cooked, but not overcooked.
  6. Remove from the heat and serve on soft rolls.
