Quick Turkey Chili
- 1 lb ground turkey
- 2 (15 ounce) cans white beans
- 1 (10 ounce) can Rotel Tomatoes
- 12 large yellow onion
- 2 tablespoons olive oil
- 3 garlic cloves
- 2 chicken bouillon cubes
- 5 cups hot water
- 14 cup cornmeal
- 1 teaspoon cumin
- 1 teaspoon oregano
- salt & pepper
- 12 cup cilantro, chopped
- Brown ground turkey.
- Saute diced onions in 2 tablespoons olive oil over medium heat until just starting to soften.
- Add garlic and saute for one minute.
- Add Rotel tomatoes (I whiz mine up in the food processor).
- Add browned turkey and beans.
- Add hot water, bouillon cubes and seasonings.
- You can add more or less water to your liking.
- Simmer for 20 minutes.
- Sprinkle cornmeal over soup and stir in to thicken.
- Just before serving stir in chopped cilantro.
