Greek Potato Salad Recipe

  1. Cut potatoes into 1/2 inch slices and place in a steamer.
  2. Steam potatoes for 8 min, or possibly just till tender.
  3. Toss steamed potatoes with 2 Tbsp.
  4. lemon juice and let cold.
  5. Drain lemon juice from potatoes.
  6. Add in olives, celery, pimento, onion and cheese.
  7. Toss gently.
  8. Combine 3 Tbsp.
  9. lemon juice, oregano, salt, and extra virgin olive oil.
  10. Pour over salad and gently toss.
  11. Serve immediately or possibly chill overnight.
