Rockin' Chili Mac & Cheese
- 2 Tbsp. olive oil
- 1 red pepper, chopped
- 1 small yellow onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. minced garlic
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 cup frozen corn, thawed
- 1 can (4 oz.) chopped green chiles, undrained
- 1 pkg. (14.5 oz.) KRAFT Macaroni & Cheese Family Size Dinner
- 2 cups milk
- 1-1/2 cups water
- 1/2 tsp. chili powder
- 1 Tbsp. chopped fresh cilantro
- 3/4 cup KRAFT Authentic Mexican Style Finely Shredded Cheeses
- Heat oil in large deep skillet on medium-high heat.
- Add red peppers, onions and garlic; cook and stir 5 min.
- or until vegetables are tender.
- Add tomatoes, corn and chilies; stir until well blended.
- Add Macaroni, milk, water and chili powder; mix well.
- Cover; simmer on medium-low heat 7 to 8 min.
- or until macaroni is tender, stirring occasionally.
- Add Cheese Sauce Mix; stir until blended.
- Cook, covered, 2 min.
- Reduce heat to low.
- Top with cilantro and shredded cheese; cook, covered, 1 to 2 min.
- or until cheese is melted.
