Kim's Tex Mex Casserole

  1. Preheat oven to 400F.
  2. Melt butter in frying pan.
  3. When butter is melted add onion, fresh tomato, and garlic powder.
  4. Cook at med heat until onion is light brown and tender.
  5. Add ground beef.
  6. Add salt and pepper to the beef.
  7. Cook until beef is fully browned.
  8. While you are waiting for the beef to brown.
  9. Pour pinto beans, yellow sweet corn, and the tomatoes with jalapeno peppers into a colander and drain well.
  10. When beef is done drain off any grease and return to frying pan.
  11. Add taco seasonings and water.
  12. stir and let simmer for 5 to 7 minutes.
  13. Then mix in pinto beans, corn, and tomatoes with jalapenos.
  14. Stir well and let simmer for 5 to 10 more minutes.
  15. Then pour into 8 x 12 casserole dish.
  16. Top with cheese.
  17. Bake for 10 to 15 minutes or until cheese is melted.
