Smoky Beans for a Crowd
- 3 lbs bacon, diced
- 3 medium sweet onions
- 6 (28 ounce) cans baked beans, undrained
- 6 (16 ounce) cans kidney beans, rinsed and drained
- 6 (15 1/2 ounce) cans butter beans, rinsed and drained
- 3 lbs sausage links, miniature fully cooked and smoked and cut into thirds
- 3 cups brown sugar, packed
- 1 12 cups ketchup
- 1 12 cups vinegar
- 1 tablespoon garlic powder
- 1 tablespoon ground mustard
- In a large Dutch oven, cook the bacon until crisp.
- Drain, reserving 3 tablespoons drippings.
- Set bacon aside.
- In the drippings, saute onions until tender.
- Combine beans, sausage, bacon and onions.
- Combine the remaining ingredients; add to bean mixture and mix well.
- Pour into four greased 13 x 9 inch baking dishes.
- Bake, uncovered, at 350 degrees F for 45-55 minutes or until heated through.
