Mandys chilli
- 900 grams lean minced beef
- 2 can tomato sauce( passatta)
- 1 can red kidney beans (undrained)
- 2 medium onion
- 4 large garlic cloves
- 3 fresh chilles( serrano)
- 1 tsp ground cumin
- 1 tbsp dried oregano
- 2 medium carrots (sliced thinly)
- 1 pepper ( any color) diced
- 1 pinch salt snd pepper
- 1 can water ( use empty kidney bean can to measure)
- Put beef into a large pot and cook until Brown and then drain off excess fat from beef ,leaving 1 tbsp in the pot with the beef
- Finally chop the garlic cloves and chillies add to pot and cook for 5 minutes stirring to avoid it sticking to the pot
- Add cumin and dried oregano mix well
- Add chopped pepper onions and carrots
- Add tomato sauce and mix well
- Add kidney beans in their own liquid ( this helps thicken the sauce)
- Add can of water ,bring to boil then reduce heat to a gentle simmer
- When reduced to Ur liken season to taste with salt and pepper and serve it in a bowl and top with Ur favourite cheese r leave plain
