Ranch Corn Muffins
- 5 each eggs, lightly beaten
- 1-1/2 qt. milk
- 1-2/3 cups oil
- 1-1/4 qt. flour, sifted
- 1-1/4 qt. cornmeal
- 1/3 cup CALUMET Baking Powder
- 3 Tbsp. GOOD SEASONS Ranch Dry Mix Salad Dressing
- 2-1/2 cups roasted red peppers, finely chopped
- Mix eggs, milk and oil with wire whisk until well blended.
- Add flour, cornmeal, baking powder and dressing mix; stir just until dry ingredients are moistened.
- Gently stir in peppers.
- Scale 1/3 cup of the batter into each of 60 muffin cups sprayed with cooking spray.
- (Or, into 12 prepared muffin cups for the trial recipe.)
- Bake in 400F-conventional oven for 12 to 15 minutes or until knife inserted in centers comes out clean and tops are lightly browned.
