Garden Veggie Sammies
- 4 sliced sourdough bread
- 4 tsp olive oil
- 1 clove garlic
- 1 small zuchini
- 1/2 cup garlic and herb feta
- 1 tomato
- 2 tbsp mayonnaise
- 2 tbsp pesto
- 1 bunch fresh spinach
- Set skillet over medium low heat
- Brush one side of sourdough with olive oil, place olive oil side down
- Layer feta, thinly sliced zucchini, sliced tomato, spinach, chopped garlic and a little salt and pepper onto the bread while its in the skillet.
- On other piece of bread brush one side with olive oil and one side with mayo and pesto, place on top of sandwich with olive oil side up
- Flip sandwich once its golden brown on bottom.
- About 6 mins.
- After 6 mins on the other side take sandwich off heat.
- Enjoy!
